Tamal de Calabaza - 

Butternut squash and honey masa, poached chicken in red chile, wrapped and steamed in banana leaf. Tomatillo milpero and avocado salsa. 

Tamal de dulce -

Canela cinnamon masa, golden raisin, roasted pumpkin seed, caramelized kabocha squash in piloncillo, wrapped and steamed in banana leaf. Passion fruit and winter citrus coulis.


REHEATING INSTRUCTIONS:
The best way to reheat for moist tamales is to steam them. Pour about 2 inches of water into a pot and place steamer or a mesh strainer over the water making sure tamales do not touch water, bring the water to a boil and then bring down to a simmer. Place tamales inside the steamer.

Steam in the banana leaf for up to 10 minutes if thawed
Steam in banana leaf for up to 20 minutes if frozen. The internal temp of the tamales should be brought up to 165 degrees

Tamales will last up to 3 months in the freezer in an airtight freezer bag
