Maestros del Mezcal is an organization in Mexico composed of hundreds of producers in various regions, within all the Mexican states that make Mezcal. Through social organization they maintain, promote and protect the rich culture, history and natural resources behind TRADITIONAL MEZCAL. Maestros del Mezcal provides financial and technical support to better palenques - or distilleries, reforest agave in danger of extinction and reforest trees used as fuel for production. Another purpose of the organization is to gain access to foreign markets, establish price standards, and in general better the standard of living in the Mezcal producing regions.
All the mezcal made by members of Maestros del Mezcal is considered traditional mezcal; that is to say, it is produced in a traditional manner without the use of special yeasts of accelerants. The only ingredients used are agave, water, work and love. All the mezcal is distilled in pot-stills made of copper, clay or wood, producing very small lots around 50 to 200 liters. The way the mezcal is made varies depending on the region and the touch of the master distiller, but is always done in a strictly artesanal, traditional manner.
The flavor profile is dryer, green, grassy and very herbaceous.
