“Sally” is carignan from the first block planted at Ricetti Vineyard, in 1939. It was picked late, as the vineyard began to shut down, and as a result the wine is rich and dark in color. The fruit fermented on skins for several days, was basket pressed to stainless steel to finish fermentation, then aged in neutral oak for 9 months, sur lie.
Indigenous yeast fermentation. 10 ppm sulfur added at bottling, no other additions, unfined and unfiltered.
