For “pink lemonade”, the abouriou and colombard were picked together as a field blend, each variety making up about half of the blend. They were cofermented on skins for a week, and then basket pressed to stainless steel to finish fermenting. Once dry, the wine was transferred to neutral oak barrels to age for 6 months, sur lie. This wine drinks like a rosé, though darker in color.
Indigenous yeast fermentation. No added sulfur, no other additions, unfined and unfiltered.
