An aromatic nose, with sharp, green notes and subtle hints of underripe stonefruit. A big, savory palate with spring onion and fresh garlic. Let it sit for a few minutes, return to find a ripe pear eau de vie, and a crisp minerality. Very complex, with a dry finish that’s a clear marker of the producer and terroir.
