Savor these bottles while they’re around because while the mezcal business is booming, the wild agave population is dwindling and will continue to do so. An aromatic nose, with sharp, green notes and subtle hints of underripe stonefruit. A big, savory palate with spring onion and fresh garlic. Let it sit for a few minutes, return to find a ripe pear eau de vie, and a crisp minerality. Very complex, with a dry finish that’s a clear marker of the producer and terroir.
