Amormata Verde was produced by Manuel y Pepe Simental in Nombre de Dios, Durango using Agave Salmiana (V. Ferox). The agaves are cooked in an underground oven and mashed by axe and desgarradora. It is fermented in pine wood vats with spring water. It is then double distilled in a traditional Durango-style copper on bottom wood “Viejo” on top with wood arm going to copper serpentine; the still can be seen in drawing on front label.
This spirit is very green with notes of green-pepper and chile, flavors that are characteristic of Salmianas. This agave grows all over Mexico and is much shorter and smaller than it’s other Salmiana cousins. In this part of Durango it grows only on old, black lava fields known locally as “Breña”. Due to its relatively low sugar content, and very specific growing conditions, batches of Verde are small, and few and far between. Because of this, the company will only be offering limited amounts of this unique spirit, sporadically.
