“Beachelorette” is colombard without skin contact, meant to be a paired experiment with “tell your sister i say hi”. Though from the same vineyard and picked only a week earlier, the absence of skin contact makes “beachelorette” brighter, less textured and more mineral than “tell your sister i say hi”. The fruit was basket pressed directly to neutral oak barrels, where it fermented slowly. It was then aged in the same barrels for 6 months, sur lie.
Indigenous yeast fermentation. No added sulfur, no other additions, unfined and unfiltered.
