As Santiago Matalan, Oaxaca became the largest mezcal producing community in Mexico it fell into the practice of large-scale commercialization and mono-cultivation of Espadin (Agave Angustifolia) leaving behind a large variety of wild agave species. One of the species is Madre Cuish (Agave Karwinskii) whose long, upright structure and fast production of clonal offshoots have lent it to use as a living fence, protecting corn and bean crops and demarcating property boundaries.

Historically Cuish was not valued much for mezcal production due to its hard, wooden consistency and for the aromas and flavors it produces. Respecting the traditional production methods and alcohol levels, Maestro Mezcalero Jose Santiago Lopez used both agave species, uniting their virtues in this mezcal, which shows delicate notes of citrus, fresh herbs, and wet earth.
